Is there any advantage to using the Studio Drivers for a Nvidia RTX 2070 when working with ConvertXtoVideo, or will the gaming drivers work just as well?

There's no such thing as "gamer drivers". Its a generic driver that works for all models but just with some tweaks at best for specific games. And no, the driver doesn't matter. If you encode to a supported codec, all that's done is CXV feeds the video frames through an api to the GPU, it's the gpu that then does the actual work.
