Before conversion you need to select correct subtitle files to be included, and then during playback select those subtitles.
There usually is subtitle file that has only "foreign parts", that is one you need to be included in conversion.

Wouldn't it be easier to connect tape recorder directly to computer microphone/line in and record from there, then use what ever video track and add that audio track to it?

That specific file has very badly encoded audio.
No need to process video, just process audio and then convert in CxD.
As original is from old film all you need is 2-channel audio, even mono audio might be enough.

If your original is 4K then you can see difference. If it is from TV - FullHD is enough.

Which converter are you using? There should be options to create Blu-Ray BDMV with different resolutions, from 480p to 1080p. (current versions are not supporting H265 and 4K) You can finetune those to change audio to have less tracks to suit that BR player. Personally I would keep that original aud...

If your player is very picky then yes, use 720p

Your original is not complying to BR standards. There is no 540p.

If you are checking subtitles on computer then usually your screen has much better resolution than DVD and players on PC smooth subtitles. Any computer now has at least 1366 pixels wide screen but DVD has only 720 pixels. Careful selecting on font and size might give slightly better result but might...
